What’s for lunch?

My 12-year-old son used to enjoy hot lunch provided by his school, but not any more. Since he doesn’t like hamburgers nor mexican food such as burritos, he always buys pizza. Occasionally, he eats terriyaki chicken or chinese food whenever the school serves. Though I’ve been curious how he can eat same type of lunch every day, he claims that he tries different toppings of pizza and likes all of them. Believe it or not, I remember that the principal of his school told parents during our school visit last year that pizza served there are prepared in a very healthy way and are considered very nutritious. So I’ve never had any concern about his lunch.

Today, I got a call from his school that his lunch account is short of money, so in the evening my husband logged on the website to deposit money to his lunch account. Suddenly we found out that our son’s online lunch record shows that he skipped all his lunches this month, instead, he bought snacks such as baked chips and smoothie every day. We couldn’t believe it and were very mad at him. He cried and confessed that he eventually got tired of his school’s hot lunch and haven’t had regular lunches since Feburary.

As a Mom, I feel very guilty as much as I’m shocked. I decide to prepare lunches for him going forward. But what’s for lunch as my son is quite picky. I appreciate if other moms have healthy, tasty and easy-prepare lunch recipes to share. Thank you in advance.
